Honey is a sweet, syrup like substance that the bees produce from the nectar of flowering plants. The bees collect the nectar, then eat it, digest it and eject it into the beehive to produce honey. How do you make sugar-free honey?
- Xanthan gum – thickens honey and helps make it breakable and sticky.
- Water – You want the water to be warm, not boiling.
- Brown sugar substitute – I used skewed brown sugar, but golden monk fruit can also be used. If you don’t have either on hand, you can use allulose.
- Honey extract – the main ingredient! This extract gives off a strong honey flavor without needing bee pollen or honey!
Add the xanthan gum and half of the warm water in a small bowl and whisk well until completely dissolved. Add the remaining water and brown sugar substitute in a small saucepan and set over medium heat. Once it starts to boil, add the xanthan gum mixture and let it simmer until it thickens.
Remove the pot from a heat and mix in the honey extract. Allow the honey to cool completely before transferring it to a sterilized jar or jar and storing it in the refrigerator until it thickens more.
Tips to make the best sugar-free honey
- Don’t worry if your honey gets a little fluffy once you remove it from the stove.
- Use a high-quality honey extract, as that makes a big difference. I prefer to use Laurent’s honey flavor as it does not dissipate over time.
- To store honey in jars, you should sterilize them appropriately.
- Storing and freezing low-carb honey
- For storage: It is best to store honey in the refrigerator, covered. It will stay suitable for up to 4 weeks.
- To freeze: Put leftover honey in a freezer-friendly container and store it in the freezer for up to 6 months.
